What FTNF actually means
FTNF stands for From The Named Fruit — or more broadly, From The Named Food. A strawberry FTNF flavouring is derived entirely from strawberries: the aromatic components are isolated from the named fruit itself, not assembled from other natural sources and not synthesised. It is the strictest tier of natural flavouring, and it exists because “natural flavouring” on its own does not promise what most consumers assume it promises.
FTNF, natural and nature-identical — the three tiers
Under EC1334/2008, the words on the label are earned by the sourcing, not the taste:
- “Strawberry flavouring” — FTNF territory. To name the food in the flavouring’s own name this way, at least 95% of the flavouring components by weight must come from the named source. This is where FTNF sits.
- “Natural flavouring”. Every component is of natural origin — but not necessarily from the named food. A natural strawberry-type flavour may be built from natural molecules obtained from entirely different plant or fermentation sources. See natural flavourings explained for the full picture.
- Nature-identical — labelled simply “flavouring”. Chemically identical to the molecules found in nature, produced synthetically. This is the workhorse of the industry: consistent, stable, cost-effective, and the basis of most of our 1,000+ profile library.
None of the three is “better” in the abstract. They answer different briefs: FTNF answers a labelling and brand-positioning brief; nature-identical answers a performance and cost brief; natural sits between the two.
When a developer actually needs FTNF
- The label must say the fruit. If the pack declares “strawberry flavouring” rather than simply “flavouring”, the 95% rule applies and FTNF sourcing is the route to it.
- Premium and clean-label positioning. Craft beverages, premium desserts and products marketed on provenance, where the ingredient declaration is part of the story.
- Retailer specifications. Some UK retailer own-label specifications require named-source flavourings for particular categories.
And when it is the wrong answer: FTNF materials are seasonal, supply-variable and significantly more expensive in use than nature-identical equivalents, and some profiles — many tropical fruits, most confectionery and dessert profiles — simply cannot be delivered convincingly from the named source alone. Why is FTNF more expensive than standard flavouring?
Because the aromatic yield of real fruit is tiny and seasonal. Isolating flavour components from the named fruit takes far more raw material than building the same profile from nature-identical molecules, and supply varies with harvests.
