How It Works

Private label and OEM flavour manufacturing: how the process works

EC Aroma Technical Team · 15 October 2026

Private label flavour manufacturing gives food, beverage and sports nutrition brands access to professionally developed taste profiles without the cost of building an in-house flavour laboratory. Whether you are launching a new product line or reformulating an existing one, understanding how the OEM flavour development process works helps you brief suppliers more effectively, reduce development cycles and protect your commercial position.

What private label and OEM flavour manufacturing actually means

In the flavour industry, private label flavour manufacturing refers to a model where a specialist manufacturer develops and produces a concentrate — or a complete flavour system — that is sold under the buying brand's own identity. OEM (original equipment manufacturer) arrangements typically go a step further: the manufacturer may also handle blending, dilution or filling to a specification that feeds directly into the customer's production line. Both models allow brands to scale rapidly while retaining full ownership of their finished product identity.

Stage 1 — The technical brief

Every successful development starts with a clear brief. A good technical brief covers the intended application (confectionery, dairy, beverages, sports nutrition, fragrance), the desired flavour profile, the carrier medium (aqueous, oil-based or dry), processing conditions such as heat treatment or high-shear mixing, regulatory market requirements, and target cost-in-use. The more detail provided at this stage, the fewer revision rounds are needed downstream.

Stage 2 — Flavour matching and prototype development

If you are working from a reference sample — a competitor product, an archived recipe or a benchmark — the manufacturer will begin with flavour matching. This involves analytical techniques alongside the sensory expertise of an experienced flavorist to reconstruct the profile from food-grade aroma chemicals, natural extracts and terpene fractions. Where no reference exists, development starts from a creative brief, building the profile iteratively through a series of evaluated prototypes.

Samples are typically submitted in small quantities — often from as little as 1 kg — allowing product developers to run in-matrix trials quickly and at low cost before committing to larger volumes.

Stage 3 — Application testing and iteration

A concentrate that smells correct in isolation may behave differently once it interacts with protein matrices, acidic beverages, high-fat systems or heat. Application testing is therefore a critical checkpoint. Feedback from in-matrix sensory evaluation drives iteration: adjusting top-note intensity, improving mid-palate body or enhancing flavour longevity under processing conditions. This stage is where the commercial value of an experienced OEM partner becomes most apparent.

Stage 4 — Specification, compliance and scale-up

Once a prototype is approved, the manufacturer produces a full technical specification including usage rate, carrier composition, allergen declaration, IFRA or relevant food regulatory compliance status, and shelf-life data. For bespoke flavour development under a private label agreement, the formula is typically locked to the customer, meaning it cannot be supplied to a third party. Scale-up trials confirm that the batch produced at commercial volumes matches the approved sample within defined sensory tolerances.

Stage 5 — Ongoing supply and reformulation support

A robust OEM arrangement does not end at first delivery. Ingredient availability, raw material cost pressures and evolving regulatory landscapes all create the need for periodic reformulation. A reliable manufacturing partner will proactively manage these changes, maintaining flavour consistency without requiring a full redevelopment cycle.
