Beverage is its own discipline

A flavouring that performs beautifully in a biscuit can fall apart in a carbonated soft drink, where the pH commonly sits below 3. Beverages are the most unforgiving application a flavour house works in: the flavouring sits in a mostly-water system, at low pH, often with a high-intensity sweetener, sometimes with protein or minerals, frequently pasteurised, and then expected to hold for months in a clear bottle on a bright shelf. There is nowhere for a weak profile to hide.

The matrix challenges we design around

pH and the acid system

Most soft drinks sit in an acidic range that suppresses some aroma notes and sharpens others. The choice of acid matters as much as the level: citric, malic, tartaric, lactic and phosphoric each give a different attack and a different length, and a profile balanced against one can read as harsh or flat against another. Low pH also accelerates degradation of certain sensitive components, so stability has to be designed in rather than discovered at month four.

Sweetener interaction

Sugar, glucose–fructose, stevia, sucralose, acesulfame K, allulose and erythritol all produce different sweetness curves. High-intensity sweeteners tend to arrive late and linger, which pushes the fruit character out of alignment and often brings a bitter or metallic tail that the flavouring is then expected to cover. A profile developed on a sugar base rarely transfers unchanged to a sweetener-reduced version — that is a reformulation, not a substitution.

Clouding, solubility and ringing

Whether a drink should be clear or cloudy is a format decision. Water-soluble systems suit clear beverages; emulsions are used deliberately where cloud is part of the appearance. Neck ringing, flotation and separation are almost always a sign that the carrier is wrong for the matrix rather than that the profile is wrong, which is why we specify the format alongside the flavour.

Process and shelf-life stability

Pasteurisation, hot fill, retort, UHT and in-line carbonation each impose their own losses. So does the pack: PET, can liner and light exposure all interact with a flavouring over months. We ask about the process and pack at brief stage because they change what can realistically be built.

Protein, minerals and functional loads

Protein binds aroma; minerals and electrolytes carry their own taste; botanicals and actives contribute bitterness and astringency. In functional drinks the flavouring is doing masking work as well as flavour work, and the brief needs to name the actives so we can design for them.

We do not publish dosage figures for beverages, because dosage is product-specific and moves with the profile, format, base, sweetener system and acid level. We recommend a starting rate for your drink and you confirm it by bench trial — which is exactly what a usable 1 kg minimum order is for. Documentation such as specifications, SDS, allergen statements and Certificates of Analysis is supplied on demand. EC Aroma does not offer white label, private label or OEM finished-drink manufacture. Liquid flavourings dispatch fastest, powders take longer because of the additional processing, so we confirm realistic timings with each quotation.

Beverage flavour questions

Why does the same flavouring taste different in different drinks?

Because the matrix does most of the work. pH and the acid system change which notes are perceived, the sweetener alters the sweetness curve and therefore the apparent balance, and dissolved solids, protein, minerals and carbonation all shift release. Assess a profile in your finished drink, not in water.

Can you supply flavourings for no and low alcohol drinks?

Yes — it's a significant part of our beverage work. Removing the ethanol removes a solvent, an aroma carrier and much of the mouthfeel, so the flavouring has to rebuild warmth, length and body the base no longer provides.

How do you stop a beverage flavour clouding or separating?

It's a solubility and format question. Water-soluble systems suit clear drinks; emulsions are used deliberately where cloud is wanted. Ringing and separation usually mean the wrong carrier for the matrix rather than a wrong profile.

What dosage should I use in my beverage?

Dosage is product-specific — it moves with the profile, format, base, sweetener system and the sugar and acid levels of the drink. We recommend a starting rate for your specific beverage and you confirm it by bench trial.

What is your minimum order and how quickly can you supply?

1 kg, in liquid or powder, including bespoke beverage profiles once approved. Liquid dispatches fastest; powder takes longer due to the additional processing.
